Might this be her baptism, five years older than the age she gave in the 1861 census?

It was found on Ancestry with an image of the page of the Register (thanks):

At St Nicholas church, Charlwood, Surrey:

“     Baptisms Continued
“            1804
“Septr. 14th  Catherine Daughter of the Revd. Henry Wise Rector of this Parish & Charlotte Marg. his Wife.”

This adds the information that her mother was Charlotte.

The age of 57 at death in 1861 gives her birth year as 1803-4, which is close enough to the above baptism in 1804.

It rather confirms that the data entered in 1861 for the census was a bit of cloud cuckoo land.
