Notes for Simon de Joinville
CP says there there is a history of this family to the first half of the 11th century by H F Delaborde in 1894: "Jean de Joinville et les Seigneurs de Joinville".
Arms Generally notes for Simon de Joinville
Auithor Unknown give him some distinct arms on his Early Blazon website.  It looks like: azure, three pairds of opposed leaves, on a chief argent a demi-lion rampant gules.
His reference is: DA 306 of 1221, where ‘DA’ translates to ‘Inventaire de la collection de sceaux’ by Douet d’Arcq.

Brian Timms gives the arms as Sable three horse braies fesswise in pale a chief argent a lion rampant issuant gules.  This indicates that I had misunderstood the illustration of the horse brays on the Early Blazon site.  But the significant difference to his son is that the chief is argent instead of ermine.
