FreeBMD has seven Caroline Surtees dying from 1845 to 1906, any of whom could be her, save for one ten-year-old.
She and her second husband were second cousins.

According to the Dec 1835 Gentleman’s Magazine, she m. Maj-Gen Sir R Chapman, Governor of the Bermudas, at Boynton, Wilts on 9th Nov 1835. The following has to be his death on FreeBMD:

It is likely she was at least 18 when she married, so she was born before 1818. I suspect Chapman was quite old at marriage if he was already a Maj-Gen and so she may have been significantly more than 18, perhaps anything up to 35??? This gives a range of her birth dates from 1800 to 1818.
