Her birth cannot be identified on the 1861 or 1871 censuses. Possibly the spelling of her name changed. So get the marriage cert to see if her father is included?
No birth registration identifiable for any ‘Sarah A Sh*’ born in Dorset in 1856 plus or minus two years

In 1901 she and her husband apprear to have split up with her keeping all the children and all the family struggling to make ends meet. Her husband was living separately but alsewhere and died eight years later.
In 1911 she has become a farmer, acres unspecified. Her eldest son is a key worker as is the widoed husband of one of her daughters as there are also two children of that marriage. There is also a lodger who is groom, possibly looking after the farm horses. Finally there is a Harding grandchild who could be either from an unmarried other daughter or from her son. The house has 11 rooms so is not insubstantial. A remarkable tale of triumph over adversity.

In both 1901 and 1911 she repeated that her birth was in Dewlish, Dorset and in 1855/56, which is indeed a parish in the Phillimore Atlas of parishes. And this Atlas says the registration district is Dorchester.
This led me to search again the censuses for any ‘Sarah Sh*’ born in Dewlish, Dorset around 1856 and this time there is a reasonable result:

But there is still no birth registration or baptism findable.
In 1851 her father was a widower and a Proprietor of Houses and was living completely on his own. I suspect he married harriet who brought with her two daughter of a previous marriage or relationship. But no marriage can be found for Sarah’s parents.

A census was need to resolve this puzzle. The 1891 one revealed that his wife was Sarah A, born 1856 in Dawlish, Devon. So she was Sarah A Sherren of the above.
