From the three Josephs, two Katherines and two Edmunds, I conclude that the earlier ones died as infants and the later ones were named to replace them.  (I could be wrong in this conclusion, some families do have more than one child with the same name.)

The CDROM trancript of the Digest (which itself is a trancript of the MM and QM records) has (Yr, Mon, Day), all at Fakenham (or unspecified):

From the Quaker MIs at Fakenham, we know that he survived his wife who died in 1744 and had “wife of Joseph” on her memorial.

Moving on, the Fakenham cemetery has a Joseph who died on 22 Nov 1771 aged 68; this death date, though not the age, is also in the Quaker Digest register.  This age of 68 makes him born in 1703, which is five years later than the presumed Joseph who was registered with a birth of 19 May 1697.  Joseph and Katherine had an earlier son Joseph borh on 9th Jane 1690 and the other option is that they had a third Joseph born in 1702 or 1703 and that the Joseph who died in 1771 and was buried in the Fakenham cemetery was him.  A bit of a mystery.
