On his death certificate, he had indeed been living at St Pancras, at 25 Guildford St. He died of old age and the informant was Mary Ann Leitch, present at his death and of Cloth Fair, West Smithfield, London.
When his second son William was admitted to the Inner Temple on 8th Jan 1821, he recorded his father as Gabriel Gillett of Guildford St, St Pancras, London.
In the 1841 census, he was aged 80, living at 35 Guilford St, St Pancras (though next door was clearly No 26) with his wife Mary Ann aged 60, son William aged 40 and four servants. He and William were both down as of independent means. William was unmarried.
